Recipe

Champagne Grapefruit Mojito

Serves: 2

Ingredients

  • 1 tablespoon agave nectar
  • 12 mint leaves
  • juice of one lime, about 2 tablespoons
  • 3 ounces good rum
  • juice of one grapefruit
  • 1 cup ice, broken into large cubes
  • about ⅓ cup champagne, club soda or tonic can be substituted
Instructions
  1. I like to juice the lime and grapefruit, then cut them into wedges and muddle.
  2. To a shaker add grapefruit juice and wedges, mint, agave, ice, lime juice and lime wedges.
  3. Muddle crushing to release flavors.
  4. Add rum and shake. (do not add carbonated beverage)
  5. Spoon out the grapefruit and lime wedges.
  6. Fill 8 to 10 ounce glasses with ice and pour half full with grapefruit/mint mixture. Finish filling glass with champagne and stir to combine.
  7. Garnish with grapefruit wedge and mint stem

1-1/2 parts Skinnygirl Meyer Lemon vodka
Splash of DeKuyper triple sec
Splash of diet lemon-lime soda
Raspberries or lemon slice for garnish

Mix ingredients in a glass with ice. Top with diet-lime soda.

Garnish with raspberries and a lemon

Signature Cocktail

Cool tropical libation inspired by, a popular cocktail served at the Fish Trap Restaurant in Cruz Bay, St. John, US Virgin Islands

Ingredients

  • 1 1/2 cups ice cubes, crushed
  • 3 tablespoons frozen lemonade concentrate
  • 2 tablespoons coconut rum (such as Malibu)
  • Lime wedge (optional)

Preparation

  1. Place ice, concentrate, and rum in a blender; blend until slushy. Garnish with lime wedge, if desired

Signature Cocktail Friday ~ Frozen Cherry Mojitos

Frozen Cherry Mojitos

1 pound bag frozen pitted cherries
3 cups crushed ice, plus extra to serve if desired
1/2 cup packed fresh mint leaves
1 cup white rum
Lime Simple Syrup, recipe follows
Lime wedges and fresh cherries, for garnish

Lime Simple Syrup

1 cup sugar
1 cup water
3 limes, juiced and zested

Directions:

1. Place the frozen cherries, ice, mint, rum, and lime simple syrup in a blender. Blend until smooth.
2. Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.

Lime Simple Syrup

In a small saucepan, combine the sugar, water, lime juice, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for about 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool to room temperature minutes before using. If making in advance, store in a sealed container within the refrigerator.

Notes:

– Not a fan of rum, give vodka a try. Not a fan of alcohol period? These were incredibly delicious without the alcohol.

Pumpkin pie in a glass?! Try it and believe it. This cold and creamy blended drink was a finalist in our 2005 Ultimate Reader Recipe contest. Readers gave it top ratings, too. Canned pumpkin and ice cream mix with pumpkin pie spice and brown sugar for a refreshingly different take on a classic holiday flavor

Ingredients

  • 2 cups vanilla reduced-fat ice cream (such as Healthy Choice), softened
  • 1 cup fat-free milk
  • 2/3 cup canned pumpkin
  • 1/4 cup packed brown sugar
  • 3/4 teaspoon pumpkin-pie spice
  • 3 tablespoons frozen fat-free whipped topping, thawed
  • Pumpkin-pie spice (optional)

Preparation

  • Combine first 5 ingredients in a blender; process until smooth. Pour 3/4 cup ice cream mixture into each of 4 glasses. Top each with about 2 teaspoons whipped topping; sprinkle with the additional pumpkin-pie spice, if desired.
